LUNCH

THIS IS WHAT IM GONNA COOK FOR LUNCH.......................FRIED PICKLES WITH RANCH DIPPING SAUCE   

Ingredients

Ranch Dipping Sauce

1
cup sour cream
1/2
cup buttermilk
1
clove garlic, finely chopped
1/4
cup chopped fresh Italian (flat-leaf) parsley
2
tablespoons chopped fresh dill weed
1
tablespoon chopped fresh chives
1
tablespoon Worcestershire sauce
1
teaspoon white vinegar
1
teaspoon salt
1/2
teaspoon pepper 
 
     Fried Pickles
1
jar (32 oz) dill pickle slices, drained
1
cup buttermilk
2
tablespoons red pepper sauce
1
cup Gold Medal™ all-purpose flour
1
cup yellow cornmeal
2
tablespoons Cajun seasoning
Vegetable oil for deep frying
2
teaspoons salt                        
 
        

Directions

  • 1In small bowl, mix all dipping sauce ingredients until well blended. Cover; refrigerate until serving time.
  • 2Pat pickles dry with paper towels. In shallow bowl, mix 1 cup buttermilk and 2 tablespoons pepper sauce. In another shallow bowl, mix flour, cornmeal and Cajun seasoning.
  • 3In deep fryer or heavy saucepan, heat 2 to 3 inches oil to 350°F. Dip pickles in buttermilk mixture, then coat with flour mixture. Working in small batches, fry pickles about 2 to 3 minutes or until golden brown and crisp. Drain on paper towels; immediately sprinkle with 2 teaspoons salt.
  • 4Serve fried pickles warm with dipping sauce
 
SHORTCUT:Im not gonna make the ranch dressing,i've already got a bottle of ranch dressing in my refridgerator im gonna use.

Pennlyvania Dutch Potato Doughnuts

I found this recipe off Pinterest...........I think i will cook some tonight


Ingredients
• 1 cup mashed potatoes
• 1 ½ tablespoons shortening, melted
• 2 eggs, beaten
• ½ cup milk
• ¾ cup sugar
• 2 ½ cups flour
• ½ teaspoon salt
• 1/8 teaspoon nutmeg
• 1 tablespoons baking powder
• Oil for frying
Instructions
Preheat oil in a frying to 365 degrees
Mix mashed potatoes, shortening, eggs, and milk in large mixing bowl until thoroughly combined.In another bowl, sift sugar, flour, salt, nutmeg and baking powder together.Add to the liquid. Dough should be soft, yet firm enough to roll.If needed,add extra flour. Separate the dough in two parts and roll each out to a thickness of ¾ inch. Cut with doughnut cutter and fry to a golden brown (about 10 minutes a batch, flipping halfway through)..Drain on paper towels. Roll in powdered sugar or a cinnamon-sugar mixture.

Stuffed Spinach Mozerella Burger





I USED THIS HALF A ROLL OF GROUND TURKEY....THE OTHER HALF I USED FOR THE PHILLYCHEESESTEAK HAMBURGE HELPER I COOKED LAST NIGHT :)




SOME RAW SPINACH LEAVES,SLICE VELVEETA CHEESE AND 1 SLICE MOZZERELLA CHEESE










FIRST SHAPE THE RAW GROUND TURKEY INTO A CIRCULAR ,THEN ADD 1 SLICE MOZERELLA AND ADD A HANDFULL OF RAW SPINACH LEAVES ON TOP OF THE MOZZERELLA




 
 

 



COVER THE SPINACH MOZZERELLA TOPPING WITH THE OTHER GROUND TURKEY HALF AND MOLD INTO A ROUND SIZE SHAPE,COVERING THE CHEESE EDGES.

 COOK AT 350 DEGREES..........I USED A WIDE SPATULA TO HOLD THE SPINACH CHEESE FILLED MEAT TOGETHER............SOME OF THE SLICED VELVETA YELLOW CHEESE AND SOME SPINACH, I WENT AHEAD AND USED FOR THE SMALLER MEATBALL SIZE THATS SHOWING.I WISH I HAD MORE RAW GROUND TURKEY TO COOK MORE THOSE SPINACH/YELLOW CHEESE FILLED MEATBALLS OH WELL



BROUGHT OUT THE FLAVOR OF THE MEAT


THATS THE MAYONNAISE MUSTARD MIXTURE..........)



 

 
I ALWAYS USE MAYONAIISE MIXED IN WITH MUSTARD ON MY BURGERS AND EVEN HOTDOGS............I HATE HATE HATE KETCHUP.......ICK :(

Strawberry Pecan Bread

I made this Strawberry Pecan Bread yesterday...............Its my pinterest inspiration

 
  
 
 


Strawberry PecanBread
Ingredients
  • 1 cup fresh strawberries, washed and sliced
  • 1-1/2 cups self rising flour
  • 1 cup white sugar, plus two tablespoons
  • 1 tablespoon ground cinnamon (* Some readers felt a tablespoon is too much, if you prefer less, use a teaspoon.)
  • 1/2 cup vegetable oil
  • 2 eggs, beaten
  • 1 cup chopped pecans
Instructions
  1. Place strawberries in a small bowl and pour two tablespoons of sugar over them. Stir and set aside.
  2. In mixing bowl, place flour, remaining sugar, oil, eggs, and cinnamon. Mix until well combined.
  3. Add pecans and strawberries and mix again until well combined and a pretty shade of pink.
  4. Pour into greased and floured loaf pan.
  5. Bake at 350 for 45-50 minutes,or until toothpick inserted in center comes out clean. Allow to cool in pan ten minutes before turning out of pan to cool completely.
